Turkey Dumpling


1 turkey quarter leg

2 bacon slices

1 rosemary sprig

1 dry apricot

some stuffing*

Accompanying ingredients:

5 carrots cut into cubes

6 celery sticks

1 onion cut in the middle

1 thyme sprig

3 slices of lemon

2 garlic cloves

4 chestnuts cut in the middle

100ml white wine

pepper grains

some olive oil

salt – pepper


Firstly we debone the turkey quarter leg. In the middle of the turkey meat put the stuffing* and twist the edges downwards. Cover with 2 slices of bacon. Decorate with the rosemary and the dry apricot. Finally tie with special elasticated meat tie loops.
Place the accompanying ingredients (onion, carrot, celery, garlic, lemon, thyme) on a baking pan and place the dumpling on top. Add some pepper grains, sprinkle with olive oil, season with salt & pepper, and finally add the wine and chestnuts. Cook in the oven at 160°C for 25-30 minutes.
